Kuih-muih, desserts Part II

Just found few more photos of kuih2 that I made when I was really into cooking in my pregnancy.. 😉

Chocolate mousse with raspberry

We picked too much raspberries when we went for the fruit picking, so I simply add them in this mousse.

Recipe (Gordon Ramsay’s Cookalong Live on Channel 4)

150g dark chocolate

250ml creme fraiche

284 ml double cream

25 g icing sugar, sifted

2 chocolate covered honeycomb (Crunchie Cadbury lah 😉 )

How to make chocolate mousse

1. Break the dark chocolate into small pieces (reserving 25g for grating later) and place in a bowl that fits snugly over a pan of boiling water. Leave until the chocolate has completely melted and then remove from the heat and set aside.

2. Add the crème fraiche to the melted chocolate and whisk until combined. Put the double cream and icing sugar into a separate bowl and whisk with an electric whisk until it forms soft peaks. Fold the chocolate mixture into the cream to combine.

3. Remove the chocolate covered honeycomb bars from the freezer, remove the packets and wrap them in a clean tea towel. Place the tea towel under a chopping board and press down hard on the chopping board to crush the honeycomb. Open up the tea towel and tip the crushed honeycomb into the mousse and gently fold through with a spatula. Spoon the mousse into four small serving dishes and then grate over the remaining chocolate and serve.

Mini round doughnuts

Recipe (this wasn’t the recipe I used to make the doughnuts in the pic, but as it’s easier and doesn’t need rising time, so I post it)

1 packet instant yeast (don’t matter  7g or 11g, as long it’s 1 packet)
 1 medium egg
2 tbsp butter
2 tbsp sugar
2 tbsp condensed milk
A pinch of salt
Plain flour ad libitum (eheh.. secukupnya..)
2 cups of warm water
1. Slightly beat the egg, until yolk and white of egg mix. Cream the butter with sugar and condensed milk. Add the mixture to the egg.
2. Add in the yeast to the warm water. After a bout a minute, mix every ingredient together until a soft dough is form.
3. Form the dough into small balls or small rings, then fry them in deep hot oil. Keep the heat medium or your doughnut will turn black in seconds 😉
Cream puffs

These cream puffs I made for the final gathering of Helwa 2008-09. The shape wasn’t how it should look like cos I just used spoon (Didnt have the piping bag, what to do..) But at least they taste like how they should, that’s alright 😀

Scones (yang xjadi..hehe..)
